What's provided in the packages?
We provide our own buffet tables with black fitted cloths, black plate risers, white porcelain plates. Our buffet service also includes white heavy duty compostable plates, black heavy duty utensils (if salad bar is selected) & condiments: Red Pepper Flakes, Oregano, Parmesan & Mikes Hot Honey.
How does it work?
You pick the 4 pizza options to be served for the all you can eat buffet then you set a time. Example: if dinner starts at 6 we served those four pizza options until 8. If salad bar and apps are chosen we serve in the first hour, unless people are still eating we keep it going. If Smores are chosen we serve in the last 30 minutes of service unless otherwise noted.
How much space do you need?
for the catering trailer we need about a 20x20 flat surface space and ample room for getting in and out for it to be unhitched. If we are on a small slope we would need to stay hitched for safety reasons. We use our catering trailer (oven on wheels) with a 10x10 pop up tent for prep.
How long does it take to make a pizza?
from start to finish about 2 minutes from stretched to cooked. Our oven is heated to 900 degrees which cooks the pizzas in about 90 seconds. A fully stocked buffet pizza bar can be replenished in less than 10 minutes.
How big are the pizzas?
12" In diameter cut to 6-8 slices. One pizza can easily feed 1-3 people depending on how hungry they are but don't worry its all you can eat so there will be plenty!
Is your crust vegan?
Yes, it's just cold water, salt, flour and yeast.
Do you have vegan options?
Yes, we can accommodate vegan options at an additional charge.
Do you have Gluten Free Options?
No, gluten is the most integral part of the wood fired process. The high gluten strength keeps the pizza from burning or tasting sour. Our Dough is naturally leavened 72 hours for easier digestion.
Whats required to secure the date?
We require a 20% non refundable deposit for date requested - this is based on number of guests, packages and/or apps desired.
